Chicken Cacciatore
Ingredients: Serves 6
2lbs Chicken
3 Tbsp Olive oil
1 Red Bell Pepper
1 Green Bell Pepper
8 oz Crimini mushrooms
2 medium onions
1/4 cup Basil
1/2 cup crushed tomatoes
3 tbsp. chopped black olives
2 tbsp. Capers
3 big cloves of Garlic
1/4 cup dry white wine
1/2 cup chicken broth
3 tbsp all purpose flour
2 tbsp Italian seasoning
1/4 tsp red chili flakes
1 tsp ground pepper
Salt to taste
Cut the chicken into 2 inch pieces and sprinkle salt, pepper and 1tbsp italian seasoning on it. In a large skillet heat 2 tbsp olive oil. Lightly dust the chicken with the flour. When the oil is heated, add the chicken to the pan in a single layer. Allow the chicken to brown on one side before turning. Meanwhile slice the onion, peppers and mushrooms. Crush the garlic.
When Chicken is browned on both side take it out of the skillet and allow it to rest on a plate. Add the remaining oil to the skillet. Add the onions, peppers and garlic. Allow them to cook for 5 mins. before adding the mushrooms. Add salt and the reamining 1 tbsp italian seasoning and the red chili flakes. Cook for another 5 mins. Add the wine and allow the alcohol to cook off. Add the crushed tomatoes,chicken broth, olives and capers. Cover and cook for 5 more minutes. Return the chicken to the pan and allow to simmer for a few minutes. Add the chopped Basil when ready to serve.
